The watering step is where it goes wrong.
Polymeric sand binds when it is watered, and it is unforgiving in both directions. Too little water and the joints stay soft and wash out in the first storm. Too much, or sweeping it in while the pavers are damp, and it sets as a haze across the faces that is genuinely hard to remove. Follow the bag.

Joint width and paver thickness drive coverage.
Sold by the bag. A wide joint on a thick paver takes far more sand per square foot than a tight joint on a thin one, so work coverage from the actual joint, not the area.
